Have you ever thrown a recipe together, and by some miracle, it worked? That's the case with these muffins. When I went to JRC's breakfast, I ended up taking a bunch of sliced up bananas home for banana bread.
Problem 1: I couldn't find my recipe. I knew it had a few key things in it (nut butter, nuts, oatmeal, etc.) but I wasn't sure.
Problem 2: The pan I always made banana bread in is still at my mom's.
What to do? I ended up just throwing everything together. Usually baking is very precise - if you mess up any ingredients, your cake/cookies/brownies could come out like garbage. Luckily, that didn't happen here. These muffins are awesome - there's 2 kinds of nut butter, including Justin's Almond Butter!
This recipe makes 11 cupcake-sized muffins and a few mini ones. You could also bake it in a real bread pan - just keep an eye on it, since I'm not sure what the cooking time is. I've been snacking on these at breakfast the past few days and I am in love. I was definitely pleasantly surprised with how they came out!
