Summer may be winding down around the country, except in the south. After I went to the gym today my car greeted me with this...
It's just gross. I was in need of something cold, but side I've been overindulging a little too much lately on sweets and snacks, I wanted something healthier. Last week I picked up two dragon fruits at Fresh Fields, but I still hadn't gotten around to eating them.
They're basically the prettiest fruits ever! But, they're a little bland and boring tasting. When you see something this insanely colorful, I guess you expect something a little sweeter.
Last summer I picked up these popsicle molds at Bed Bath and Beyond. I think I've tried to use them once before, and they've been sitting in my drawer ever since. With the heat, an ice pop sounded perfect!
These are really easy to make. I diced up the two dragon fruits and popped them in my Magic Bullet with some frozen mango, frozen blueberries, about 1/2 cup of almond milk, and 1 tbsp of honey. Blend it all up until all the fruit is a liquid (you may have a few chunks, but that's okay), and pour it into your molds. Pop them in the freezer for about 4 hours, and enjoy!
Chocolate, chocolate, and more chocolate! And sometimes, real food!
