Are you ready for some football?
Since it's just about football season (preseason doesn't count. Just ask the 2008 Lions), we had a football-themed potluck at work. I'm still in a food coma from all the tailgate food we had.
Beer meatballs, dip, chips, chicken, burgers, hot dogs, pigs in a blanket. Not one bite of it was healthy and I really don't care. I told myself I would eat till i was full, and I did.
Anyways, my contribution was dessert! I made Oreo brownies and these football cupcakes.
As a confession...I used box mix. I was very pressed for time this week with work, and since I already had a box of cake mix in the pantry, that's what I used.
The key to using boxed mix is dressing it up a little bit. I picked up a bag of Oreos (double stuff!) and crushed up half of them for these cupcakes. The other half went into the brownies.
I found these adorable cupcake wrappers at Walmart. They also had baseball and soccer ones, but we don't need those this time around. Walmart also had an all-in-one frosting dispenser with a bunch of tips. I've been using the old-fashioned plastic bag technique and ending up with frosting everywhere, so this was very helpful.
Decorating the cupcakes is really simple. All you need are your frosting tips, a chocolate frosting (I used milk chocolate), and a vanilla frosting. Once the cupcakes are cool (all the way cool, or your frosting will melt everywhere) do a swirl with the star tip with your chocolate frosting. With a normal line tip, do one straight line and a few to cross it the opposite way. Voila! Footballs!
Chocolate, chocolate, and more chocolate! And sometimes, real food!
