Sometimes, you just want something sweet. Since baking is a big source of therapy for me, I find myself doing it as often as I can. Luckily, my friends and coworkers are more than willing to act as taste testers.
The other day, I was scanning Pinterest (when am I not doing this?) and I wanted to try something new with brownies. Typically, I stuff my brownies with all kinds of things - Oreos, Reese's, M&M's, etc. This time, I stumbled on a recipe straight from Berry Crocker herself (maybe not exactly from her...) for Peanut Butter Truffle Brownies, and I was sold.
I tweaked this recipe a little bit, since I made mine with a family sized box of brownies. My peanut butter recipe included 1/2 cup of butter and 1/2 cup of peanut butter, plus however much sugar I needed (I eyeballed it) to make it taste good. It comes out like peanut butter fluff, and it's so good! The only problem I ran into was with the chocolate chips on top, since my chocolate started to thicken too early. I swirled the chocolate with the peanut butter, and no one noticed.
These are really sweet, so I suggest cutting them into smaller pieces. My coworkers couldn't finish them all, but luckily my friends were there to save the day!
