I spent all weekend eating fried chicken, cupcakes, candy, and drinking, so I wanted to eat some real food and get back on track. It was kind of chilly here today so I wanted to have some soup. Canned soup just didn't sound appetizing, so I went to Pinterest for some inspiration.
I took this awesome recipe, tweaked it a bit, and it came out awesome. The grilled cheese sticks were a perfect addition to the side, and who doesn't love grilled cheese and tomato soup?
This recipe yields enough for two people. If you want/need more, I would consider doubling the amounts of everything. Most tomato soup recipes call for 5 pounds of tomatoes, but since I was only feeding myself, it didn't seem necessary to spend all that money on ingredients.
